Desiccated Coconut or what is known as dry grated coconut is the result of processing old coconut flesh which is mashed by chopping or grating without adding other ingredients and then drying it hygienically. Good quality Dessicated Coconut is physically characterized by its clean white color and relatively clean from other colors (yellow, brownish, black), has a distinctive coconut aroma that is pure and not rancid, has a uniform size and is free from other materials.
Based on the fineness of its size, Dessicated Coconut is grouped into extra fine grade (very fine), fine grade (fine) and medium grade (coarse). Meanwhile, based on the fat content, it is divided into Desiccated Coconut Full Fat (high fat) and Desiccated Coconut Low Fat (low fat).
Dried grated coconut is often used as an ingredient in food mixtures, such as biscuits, cakes, confectionery, and others. In addition, dry grated coconut can also be reprocessed into various food products such as coconut flour, creamed coconut, toasted coconut, sweetened coconut and also coconut chips.
